Everything you ever wanted to know about kombucha* (*but were afraid to ask)

How do you make Kombucha?

Kom-boo-cha is a fermented fizzy drink that is produced by fermenting sugary tea using a symbiotic colony of bacteria and yeast (SCOBY). It is full of probiotics which is essential for optimum gut health.

Why should you buy from us?

Brighton Booch is the tastiest, zingiest Kombucha out there. We have honed the flavours to perfection and people just can't get enough of them. Imagine opening your fridge to a chilled Brighton Booch every day.

What are the floaty bits?

The floating bits are the living Kombucha cultures and are good for you! and are a sign that the drinks are raw and not pasteurised. Strain if preferred. This proves that your drink is ‘alive’

What's a Scoby then?

The SCOBY is thick pancake of jelly-like bacteria and yeast. It stands for a Symbiotic colony of bacteria and yeast. The bacteria and yeast in the Scoby eats the sugar and converts it into acid and then consumes it again to convert it to a tangy and sweet liquid - cool huh?

How much should I drink?

The recommended amount to take is around 1-2 bottles a day, but as with all supplements, probiotics, and foodstuffs, the quantity of Kombucha needed varies per person, just listen to your body.

What does it taste like?

Kombucha satisfies the sweet and the sour taste buds. You will always have that earthy, rich feel to the drink whatever the flavour you decide on but that's what makes it special. If you are unsure of which one to get why don't you start with our variety pack.

Where is Kombucha from?

The first recorded use of kombucha comes from China and. It was known as "The Tea of Immortality". It has been used in Eastern Europe, Russia and Japan for several centuries. The name kombucha is said to have come from Japan.

Is your Kombucha raw?

Yes! Brighton Booch started its journey from the world of Raw food. Much of the benefit of drinking kombucha comes from the billions of living beneficial bacteria (probiotics) which are essential for good digestive health. Pasteurisation heats food and drinks to kill microbes and bacteria, which you definitely don't want.

Do you want more fizz?

All of our drinks will have had a third ferment for at least 3 days before being chilled to slow down the fermentation process. Although Naked will never be as fizzy as the fruit-based drinks if you would prefer a bit more fizz, then leave the bottle out at room temperature before opening. Warning: if you leave Kombucha out for a long time in a hot room it will keep fermenting and could explode!      See here
